Abstract

90 years ago, in January 1912, the first issue of the magazine " Kholodilnoye Delo" (the predecessor of today's jubilee - the magazine " Kholodilnaya Tekhnika") was published in Russia. The magazine was founded by the Moscow Committee on Refrigeration under the Moscow Society of Agriculture. Its publisher was M. A. Ilyashenko, a member of the committee, and M. T. Zarochentsev, secretary of the committee, was the editor. All members of the committee, including V.E. Tsydzik, O.O. Dreyer, Y.Y. Nikitinsky, S.A. Poderni, and many others actively participated in the work of the magazine.

Abstract

The use of cold to preserve perishable food products has been known to mankind since ancient times. It is enough to remember the ancient Greek and Roman states, where caves in the mountains with all kinds of ventilation passages and holes were used to preserve vegetables, fruits and wines. Ancient Romans dug out deep cellars in the ground, where in the winter and summer a constant temperature of 8... 10 °С. Similar refrigerators in the mountains were also built in the Middle Ages in the Balkan countries, Crimea, Moldavia and the Caucasus. In some places people managed to create caves with sufficiently cold and dry air. The water of streams and wells was also used to preserve food in summer.
