摘要

The authors studied and examined the results of fruits processing using sterilizing doses of 1-4 kGy with the intention of increasing tissues penetrability and softening, raw material antiseptization, prolonging storage life before treatment as well as improving the yield and keeping the fruit juice quality. Raw material radiation leads to enhancing juice extraction by 10-15%, at the same time high chemical and technical indices and organoleptic properties are kept. It provides microbiological safety of raw materials and juices; reduces spoilage and mass losses 3-5 times, prolongs raw material storage life before processing up to 15-30 days.
